Meal Prep Hack Just in Time for Summer!
If you’re like me, you’re constantly on the go. From home, to the office, to the gym, the grocery store, the appointments, the events. It goes on and on. It can be difficult to stay healthy when we’re spread so thin. That’s the main reason I love this super portable helpful hack for those on-the-go days. I’m talking about mason jar salads!
It’s super easy to toss bits and pieces of veggies in a jar with some greens and dressing. Then, simply empty the jar out onto a plate or bowl when you’re ready and boom, bam, salad!
It’s important to pack your salad in the correct order (to make sure the dressing doesn’t make anything soggy). Put your dressing in the jar first, followed by hard veggies (carrots, peppers, broccoli, cucumbers, etc), then soft veggies (tomatoes, corn, onion, avocado), protein (cheese, meat, beans, eggs), and finally your greens (lettuce, spinach, arugula). This way when you dump out the jar you end up with a nice bed of greens supporting your various toppings and dressing.
Mason jar salads are perfect to pack in your lunch bag and they are super easy to meal prep. We’re also in the midst of picnic season and these would be great there as well.
Super tip: how fun would it be to team up with some friends or co-workers to create a salad bar? Everyone brings enough of an item to share (i.e. someone brings carrots, someone else brings tomatoes, etc) and you each meal prep for the week ahead! You could also buy a few larger mason jars to use for prepping larger salads as sides for weeknight dinner.
